If you plan on grazing livestock in the orchard later, it will be easier to seed the ground with whatever graze you want before planting the trees. Some people like to graze sheep or pigs in orchards because they aren't likely to do much damage to trees the way goats will. You'd want to consult some sites about pastured pigs or sheep to find out what to plant.
